Elegant Elderflower Dreams, a Mocktail suggestion
This is a delicious alcohol free summer drink made with Elderflower syrup and sparkling water. Add a slice of lemon to dress it up.

Where I live it is called Hollersaft and we drink it ALL summer. It is also very easy to make your own Elderflower syrup. Here is what you need:
3 cups granulated sugar
1 3/4 cups water
2 tablespoons citric acid
15 elderflower heads
1 sliced lemon
1 sliced orange (optional)
Here is what you do:

Remove any insects or debris from flowers. Do not wash or soak or they will lose their flavor.
Over medium heat combine sugar, water, and citric acid in a saucepan. Stir until hot and the sugar has completely dissolved. Remove from heat. Let the syrup cool to room temperature.
Put blossoms, lemon , and orange slices in a large bowl.
Add the syrup to the blossoms covering them completley.
Cover the bowl with a towel and let sit for 2 days, stirring occasioanly.
Afer 2 days strain the syrup through a fine sieve or cheesecloth into a bottle. We used a clean dish towel.

The syrup is stored best in a cool temperature.
